What Is The Swiss Water Process? 


In short, the Swiss Water Process is a way of decaffeinating green coffee beans using only water, making this technique 100% natural and organic. It was first introduced in 1979 by Coffex, and it was the only commercialized process for decaffeinating coffee beans that didn’t involve other solvents. 


In fact, the Swiss Water Process was certified as organic by the Organic Crop Improvement Association — the world’s largest organic certification agency. This means that the Swiss Water Process comply with the standards of the USDA National Organic Program. 


Using the Swiss Water method, the caffeine is removed from the beans. In order to do this, the coffee beans are soaked in water to remove the caffeine from the bean. The caffeine soaks out of the beans and into the water. The beans are then dried and repackaged, now as caffeine-free coffee beans. As a result, you are left with a product that is 99.9% caffeine-free. 


But many people are wary of this process because they’re worried that the water will take the rich coffee flavors out of the bean. To avoid this, the beans are soaked in flavored water, most commonly in a Green Coffee Extract that contains all of the components of green coffee minus the caffeine.  


The water will still extract the caffeine from the bean but the flavored water keeps that bean’s original flavor. The caffeine will move from the coffee beans into the Green Coffee Extract, effectively decaffeinating the beans. This process is repeated until there is no more caffeine left in the beans. In total, this process can take anywhere from eight to ten hours. 


The final resulting product creates a decaffeinated coffee that, when brewed later, will still maintain the distinct flavors that were present in the original coffee bean.
