Daily Cleaning
The daily cleaning of your espresso machine should be done at least at the last shift or at the end of the night. The first step in the cleaning process is to backflush the machine. To do this first remove the portafilter and insert a back flush disk or blind filter.
Put cleaning detergent into the blind filter and insert it back into the group head.
Activate the group by pressing the manual or program stop button, Let the machine run for 5 seconds then stop and wait 15 seconds repeat this process five times. Now the detergent is in the group head breaking down coffee and oils throughout the head that accumulated from normal use.
After this process run water through the group head to rinse all detergent that was in the head.
Scrub the underside of the group head with your group head brush. Make sure to reach all the areas in the head to further remove any residues.
You should also clean the steam wand daily to ensure no milk residue collects on or in the wand.
Soak the wand overnight in hot water in the morning you are ready to finish the cleaning. Do not scrape the steam wand only wipe with a soft cloth.
Look to make sure the wands tip is free of clogs. Take the tip off and look at all the holes at the bottom make sure they are all visible and free of particles. Replace the tip and secure it tightly.
Make sure the work area is clean wiping down all surfaces.
Weekly cleaning
One day per week remove the screens, diffuser and disassemble the portafilters.
Soak all parts in a cleaning detergent overnight. disconnect the basket from the portafilter and soak overnight as well. Try not to submerge the handle in the detergent. Rise all parts completely then reassemble.
